"This southern menu has been assembled and inspired by the southern-comfort cooking from my own upbringing. One of my many inspired food memories has been helping in the kitchen, alongside my stepmother, who owned the southern-comfort restaurant “The Relay Station”- the place you go to have a good meal and “hang your boots up for a while.” Rosemary, Oregano, Parsley, and Thyme were all well-used aromatics for steaks, porks, bbq rubs, or chicken. The star of any southern dish is the meat, usually taking hours or even days to perfect before serving. Broccoli, Cauliflower, Carrots, Radishes, Lettuce, Kale, Collards, and Spinach were all plucked from the garden and thrown into the cast iron with a hearty amount of bacon fat and minced garlic. The cool-season crop combos are endless, and all of them can be made to accompany your entree in under half an hour. My stepmother’s favorite garnish- cilantro.
